Idit’s Oatmeal Chocolate Chip Cookies

These oatmeal chocolate chip cookies come from my sister Idit, who is somehow a little domestic diva. You can call her on any night of the week and chances are, she’s sipping a glass (or two) of wine and baking. These are easy to make and relatively healthy: no white sugar. Idit says, “They’re like those comfort cookies. They’re just good.”

INGREDIENTS:

*1 cup margarine or butter
*1 and a 1/4 cup brown sugar
* 1 Extra large egg
*1 and a 1/4 rolled oats
*1 cup shredded coconut – unsweetened
*2 and 1/4 cup flour
*1/2 tsp of salt, baking soda and baking powder
* 1 tsp of vanilla extract
*1 cup chocolate chips

DIRECTIONS:

1. Blend together margarine, brown sugar & the egg
2. With a wooden spoon, fold in rolled oats & coconut
3. Add salt, baking soda and baking powder to the flour, and slowly fold that mixture in to the brown sugar mixture
4. Add vanilla extract
5. Add chocolate chips
6. Place cookies on parchment paper
7. Bake at 350 for 10 minutes or until golden brown
8. Cool and then eat
